Salad Ingredients

🥫 2 cans chickpeas (drained and rinsed)
🫑 1 orange bell pepper
🧅 1 red onion
🥒 3 Persian cucumbers
🍅 2 cups cherry tomatoes
🫒 1/2 cup Kalamata olives
🌱 1 cup chopped dill
🌿 1 cup chopped parsley


Instructions

1- Prepare the Dressing:

  • In a large bowl, combine the extra virgin olive oil, lemon juice, red wine vinegar, Dijon mustard, salt, black pepper, and oregano.
  • Whisk the ingredients thoroughly until well-blended.

2- Chop and Prepare Vegetables:
