Comfort in a Bowl Chicken Noodle Soup
Experience the warmth and nourishment of a classic homemade chicken noodle soup with a refreshing citrus finish. This comforting bowl is perfect for a cozy dinner or soothing remedy on a cold day.
Ingredients

1 medium onion, finely chopped
π₯ 1-2 cups chopped baby carrots
π₯¬ 3 large celery stalks, chopped
π§ 6 cloves garlic, finely minced
π₯ 1 tablespoon grated ginger
π§ 3 tablespoons unsalted butter
π« 2 tablespoons olive oil
πΏ 1 teaspoon turmeric powder
π§ 1 teaspoon garlic powder
β« 1 teaspoon black pepper
πΆοΈ 1 teaspoon paprika
π± 1 teaspoon dried thyme
π 2 x 32 oz cartons chicken broth or stock
π― 1 heaping tablespoon Better Than Bouillon Organic Roasted Chicken Base
π§ 1 teaspoon salt
π 3 cups shredded chicken breast
π₯ 2 cups egg noodles
π 1 lemon for juice, plus wedges for garnish
πΏ Fresh parsley or cilantro, chopped for garnish
π Sourdough bread, sliced and toasted for serving
Instructions
1- Prepare the Base:
- In a large pot or Dutch oven white enamel interior, light grey exterior melt the butter with the olive oil over medium heat.
2- Cook Vegetables:
- Add the chopped onion, celery, and carrots.
- Cook for 6β8 minutes, stirring occasionally, until the vegetables are softened and fragrant.
3- Add Garlic and Ginger:
- Stir in the minced garlic and grated ginger.
4- Add Spices:
- Add the turmeric, garlic powder, black pepper, paprika, and thyme.
- Stir well and let the spices toast for 30β60 seconds to deepen their flavor.
5- Add Broth:
- Pour in both 32 oz cartons of chicken broth.
6- Dissolve Bouillon:
- Add the heaping tablespoon of Better Than Bouillon and stir until fully dissolved.
7- Season with Salt:
- Add 1 teaspoon of salt.
8- Add Chicken:
- Add the shredded chicken.
- Stir to combine.
9- Simmer Soup:
- Cover the pot and let the soup simmer for 15β20 minutes.
10- Cook Noodles:
- Stir in the egg noodles.
- Simmer uncovered for 8β10 minutes, or until the noodles are tender.
11- Finish with Lemon:
- Turn off the heat and stir in the fresh juice from one lemon.
12- Taste and Adjust:
- Taste and adjust salt or pepper if needed.
