Giveshk - Kurdish Rice and Beef Dish

Ingredients
🥩 4 cups ground beef
🍚 3 cups basmati rice
🧄 1 head of garlic, finely chopped
🐔 2 tablespoons chicken bouillon
🧂 1 tablespoon salt
🌶️ 1 tablespoon black pepper
🛢️ 1/2 cup oil (any kind will do)
💧 3 1/2 cups hot water
🥔 3 potatoes, sliced
Instructions
1- Prepare the Rice:
- Thoroughly wash the basmati rice until the water runs clear to remove excess starch. Drain well.
2- Combine the Ingredients:
- In a large bowl, mix the drained rice with the ground beef, chopped garlic, chicken bouillon, salt, and black pepper. Ensure all ingredients are well combined.
3- Heat the Oil:
- In a small pot, heat the 1/2 cup of oil until it’s smoking hot. Carefully pour the hot oil over the rice and beef mixture. Mix well to incorporate the hot oil throughout.
4- Form the Giveish:
- Line the bottom of a large pot with the sliced potatoes.
- Scoop about two tablespoons of the rice and beef mixture into your hand, forming it into an oval, football-like shape.
- Place each shaped giveish onto the layer of potatoes. Repeat until all of the mixture is used.
5- Cook the Giveish:
- Place the pot on the stove and turn the heat to high. Cook for 10 minutes.
- Pour 3 1/2 cups of hot water over the giveish. The water should just cover them.
- Cover the pot with a lid and let it cook until the water evaporates.
- Reduce the heat to low and allow the giveish to cook for an additional 25 to 30 minutes.
6- Serve:
- Once cooked, carefully flip the pot onto a serving plate, similar to flipping makloubah.
- Accompany the dish with onions sprinkled with sumac, parsley, lemon slices, and a drizzle of lemon juice for enhanced flavor.
