Avocados Egg Rolls

Ingredients
🥑 2 avocados
🧅 1 small red onion
🍅 1/4 cup of sun-dried tomatoes with oil
🌿 1/4 cup of cilantro
🌶️ 1 jalapeño
🍋 Juice of one lime or lemon
🧂 1/2 teaspoon of salt
⚫ 1/2 teaspoon of black pepper
🌿 1/4 teaspoon of cumin
🫔 Egg roll wraps
🥚 1 egg (for sealing)
Instructions
1- Prepare the Filling:
- Chop the avocados and place them in a mixing bowl.
- Finely dice the red onion, sun-dried tomatoes, cilantro, and jalapeño. Add them to the bowl with the avocados.
- Squeeze the juice of the lime or lemon over the mixture.
- Sprinkle in the salt, black pepper, and cumin. Gently mix everything together until well combined.
2- Prepare the Egg for Sealing:
- In a small bowl, beat the egg and set it aside. This will be used to seal the egg rolls.
3- Assemble the Egg Rolls:
- Take an egg roll wrap and lay it flat on a clean surface.
- Place two tablespoons of the avocado mixture in the center of the wrap.
- Brush the edges of the wrap with the beaten egg.
- Fold the sides over the filling, then roll tightly to form a cylinder, ensuring the edges are sealed well.
4- Fry the Egg Rolls:
- Heat oil in a frying pan over medium heat.
- Carefully place the egg rolls into the hot oil and fry until they turn golden brown on all sides.
- Remove from the pan and let them drain on paper towels to remove excess oil.
5- Serve:
- Serve warm with your favorite dipping sauce such as sweet chili sauce, ranch, or a cilantro-lime dip.
