Crispy Purple Sweet Potato Spring Rolls
In Indonesia, sweet potatoes are indeed one of the most readily available food ingredients. Local farmers here love growing sweet potatoes—whether they’re purple, yellow, or other varieties. Sweet potatoes certainly have their own unique appeal; in my opinion, different colors mean different flavors. Purple sweet potatoes aren’t as sweet as other varieties, so they pair perfectly with snacks that are only slightly sweet.
Yesterday, I made a sweet and soft sweet potato dessert. Today, however, it’s going to be different—this time, the dish is vegan and, of course, easy for you to make at home. And for all you vegan lovers out there, come on over—I’m sure this will be an interesting idea for a sweet potato snack.
Crispy Fried Sweet Potato Spring Rolls
Crispy fried sweet potato spring rolls are actually a non-vegan dish, but I’ve adapted it into a vegan version by omitting milk and cheese. The original recipe calls for cheese in the filling and adds milk after the spring rolls are fried. Instead, for the sweet topping, I use powdered sugar—the same kind I often use on donuts.
Ingredients
200 grams purple sweet potatoes
1 tablespoon powdered sugar
Donut sugar (topping), to taste
Raisins, to taste
¼ teaspoon salt
8 spring roll wrappers
Making Procedure
Boil the sweet potatoes until tender, then mash them by hand using a fork.
Add powdered sugar and a pinch of salt, then stir until well combined while continuing to mash.
Take one spring roll wrapper, place the mashed sweet potato filling on it, and add a topping of raisins.
Roll up the spring roll wrappers and repeat until all the filling is used up. Dilute the all-purpose flour with just a little water until it thickens.
Dip the spring rolls in the batter, then fry them slowly, one by one, over medium heat until crispy and golden brown.
Result
The end result is absolutely beautiful—the sweet potatoes are perfectly wrapped in spring roll wrappers. After being fried in a batter made from dissolved all-purpose flour, the outside becomes incredibly crispy and is a real treat to enjoy while still warm with a cup of coffee. In my opinion, this snack is rich in flavor—the crispy outer layer with a hint of sweetness from the donut sugar, plus the sweet-yet-not-too-sweet sweet potato inside. A touch of raisins adds a delightful blend of tart and sweet flavors.
Although I think this is a fairly filling snack, enjoying just one piece won’t be enough; you’ll definitely want more than one. The flavor is extraordinary, very exotic; I love all the combinations, and most importantly, the texture makes it even more delicious.
