Cassava Balls with Dragon Fruit Stuffing

Dragon fruit has such a beautiful color, I often make snacks from it. Whatever new recipe I find from the fruit is the quickest to try. Yeah the shape is cute and the color is super bright so anyone would love it.




This time the combination of one snack that made me very curious from a long time ago. That is processed boiled cassava with dragon fruit filling in it so that the shape is very unique and has an adorable character.




Dragon Fruit Stuffed Cassava Balls

Cassava dragon fruit cake is a combination of cassava which is boiled and then mashed until smooth. Then after mashing, add the dragon fruit filling in it. The unique color is so interesting and the most tantalizing is the final layer with a touch of dried coconut sprinkles that are abundant.

Now this sprinkling of dried coconut is the hardest ingredient for me to find in my area. I had to order it from an online store some time ago. As a result, after finding dried coconut, I immediately shopped for other ingredients in the form of dragon fruit and cassava. Dragon fruit is cheap now the price is only IDR.20,000 rupiah, this is very cheap from the usual price.



Curious isn't it with the step-by-step process of the procedure for making it.




Ingredients Used

350 grams cassava
200 grams dragon fruit
50 grams dried kalapa
1 tablespoon sugar
¼ teaspoon vanilla powder
¼ teaspoon salt




Making Procedure


Boil the cassava in a cooking pot until cooked, don't forget to add salt during the boiling process.

While waiting for the cassava to cook, I prepare the dragon fruit pieces, cut into small squares or according to your taste.

After the cassava starts to cook, remove it and drain it, then leave it while hot, add salt, sugar and also mash it.

Pound until smooth and easy to shape, then take a little dough flatten and give the dragon fruit filling that has been cut.

Then roll in dry grated coconut until all are stirred.

Cassava balls with dragon fruit filling are ready to be enjoyed, serve on a serving plate then to make it look interesting cut some of the cassava balls. This is indeed very cute and adorable anyone would really like it, the combination of white cassava color that I deliberately bought white cassava combined with the bright pink color of dragon fruit. Uhh this is a very cute combination in my opinion, it even makes me want to finish it immediately. But I can't, it will make me full very fast.

I tasted this cassava ball, the sweetness is just right, the cassava is really soft, plus the freshness of the dragon fruit with the right natural sweetness.
