Ingredients

๐Ÿ— 1000g Chicken Thigh Fillets
๐Ÿง… 3 Onions
๐Ÿซ’ 30g Olive Oil
๐Ÿง‚ 1 Tbsp Salt
๐ŸŒถ๏ธ 1 Tbsp Paprika
๐Ÿง„ 1 Tbsp Garlic Powder
๐Ÿง… 1 Tbsp Onion Powder
๐ŸŒถ๏ธ 1 Tbsp Chipotle Paste
๐ŸŒฟ 1 Tbsp Oregano
๐ŸŒฟ 1 Tbsp Cumin

๐Ÿ… 500g Cherry Tomatoes
๐Ÿง… 1 Onion
๐Ÿง„ 6 Garlic Cloves
๐ŸŒถ๏ธ 2 Red Chillies
๐ŸŒฟ 1 Handful of Coriander
๐Ÿ‹ 1 Tbsp Lime Juice
๐Ÿง‚ 1 tsp Salt

๐Ÿฅ› 300g 0% Greek Yoghurt
๐ŸŒถ๏ธ 3 Jalapeรฑos
๐Ÿฅ‘ 1 Avocado
๐Ÿ‹ 1 Tbsp Lime Juice
๐Ÿง‚ 1 tsp Salt

๐Ÿง… Chopped Onion & Coriander for garnish
๐Ÿง€ 10g Grated Mozzarella per tortilla
๐ŸŒฎ Tortillas for 8 quesadillas


Instructions

1- Marinate the Chicken:

  • Dice the chicken thigh fillets and thinly slice the onions.
  • In a large mixing bowl, combine the chicken, onions, olive oil, salt, paprika, garlic powder, onion powder, chipotle paste, oregano, and cumin. Mix well to ensure even coating.

2- Roast the Chicken:

  • Preheat your oven to 200ยฐC.
  • Spread the chicken mixture on a metal oven tray and roast for 20 minutes or until the chicken is cooked through and slightly charred.

3- Prepare the Burnt Salsa:

  • Halve the red chillies and cut the onion into chunks. Peel the garlic cloves.
  • Place the cherry tomatoes, chillies, onion, and garlic on a clean oven tray. Grill until they are charred.
  • Transfer these to a Nutribullet-style blender and add coriander. Blend until smooth. Season with lime juice and salt.

4- Prepare the Green Salsa (Avocado Crema):

  • In the blender, combine Greek yoghurt, jalapeรฑos, and avocado. Blend until smooth and creamy.
  • Season with lime juice and salt.

5- Assemble the Quesadillas:

  • On each tortilla, sprinkle 10g of mozzarella on one half, then top with a portion of chipotle chicken. Fold each tortilla in half.
  • Heat a non-stick pan, such as the Our Place Always Pan, over medium heat. Cook the quesadilla until crispy and golden brown on each side, ensuring the cheese is melted.

6- Serve:

  • Open the quesadilla slightly, add some green salsa and garnish with chopped onion and coriander. Serve with burnt salsa for dipping.
