Dandelion
Dandelion at the entrance to my garden
It's right on the path, it's a little annoying, I need to mow the grass, but I don't want to mow the dandelion
because dandelion is a very medicinal and edible plant
Dandelion contains bitter substances, a lot of potassium, resin, essential oil, 40% inulin (in the root). The leaves contain 16-18% vitamin C, iron about 3%.
The leaf is used in salads and it seems quite tasty to me
But also a recommendation to use young leaves, old ones can be a little bitter
Wash and chop fresh dandelion leaves, pour olive oil, add a little salt and a few drops of lemon juice.
The flower and root are used for tea, soups, stews ... but I haven't prepared anything yet, when I find a good recipe, I'll share my impressions
