Meatless Spaghetti home made sauce
This was the first year I tried growing Eggplant. I had two, the regular and a smaller Japanese variety.
They both have been bearing a few in a weekly or less pattern
I've given away a lot, most people don't want them, like me they didn't know what to do with them.
I tried Dried, fried etc... and still they were going bad in my fridge.
I'd seen a recipe on one of the cooking shows I watch.
Cut the Eggplant into one inch cubes, drizzle with olive oil, spread out on paper towel (I used unbleached coffee filters) and put in the microwave just to dry them out some.
Take that out, let cool, then sautee in more olive oil.
I added my own homegrown Basil, Oregano and some diced banana peppers. and one can of Cento Italian crushed tomatoes.
After a while, I cooked one bundle (one serving) of Japanese Udon Noodles
That was some of the best eatin' I've had in a while.
