Roasted Beet Salad

his delightful roasted beet salad is a perfect blend of earthy beets, crispy spring greens, and crunchy toasted almonds, all brought together by a refreshing citrusy dressing. It’s a light yet satisfying dish, perfect for a healthy lunch or as a vibrant side to your dinner table.

Ingredients

— Salad Ingredients —
🫑 5 small beets (washed, roasted, and peeled)
🥬 Spring mix
🧅 1/2 red onion, thinly sliced
🌰 1/4 cup toasted almonds

— Dressing Ingredients —
🫒 1/3 cup extra virgin olive oil
🍋 1/4 cup fresh lemon juice
🍇 1 tablespoon balsamic glaze
🧂 1/2 teaspoon salt (or to taste)


Instructions

1- Roast the Beets:

  • Preheat your oven to 375°F (190°C).
  • Wash the beets thoroughly and place them on a baking tray.
  • Roast in the oven for about 1 hour or until tender.
  • Once roasted, remove them from the oven, allow them to cool, and then peel and slice.

2- Toast the Almonds:

  • In a skillet over medium heat, add the almonds and toast them until they become lightly golden and fragrant.
  • This should take about 3-5 minutes.
  • Set aside to cool.

3- Prepare the Dressing:

  • In a bowl, combine the olive oil, fresh lemon juice, balsamic glaze, and salt.
  • Whisk together until the dressing is well mixed and emulsified.

4- Assemble the Salad:

  • In a large salad bowl or platter, layer the spring mix and top with the sliced roasted beets and red onions.
  • Sprinkle the toasted almonds on top.

5- Dress the Salad:

  • Drizzle the prepared dressing over the salad.
  • Toss gently to ensure all the ingredients are coated with the dressing.

6- Serve and Enjoy:

  • Serve immediately as a refreshing and healthy appetizer or side dish.
