Chipotle Chicken Burritos

Ingredients
For the Chipotle Chicken:
๐ 2 chicken breasts, diced small
๐ถ 1 can (7.76 oz) of chipotle sauce
๐ง 1 tablespoon of Adobo seasoning
๐ข 2 tablespoons of oil
For the Black Beans:
๐ซ 1 can of black beans
๐
1 can (10 oz) of diced tomatoes with green chilies
๐ฅ 1 teaspoon of chicken bouillon
For the Cilantro Lime Rice:
๐ 2 cups of cooked white rice
๐ Juice of 1 lime
๐ฟ 1/2 cup of cilantro, chopped
Additional Ingredients for Burrito Assembly:
๐ง Cheese of your choice
๐ง Queso
๐ฅฃ Pico de gallo
๐ฅ Guacamole
๐ถ Sour cream
๐ฏ Tortillas
Instructions
1- Prepare the Chipotle Chicken:
- In a bowl, combine diced chicken, chipotle sauce, and Adobo seasoning. Mix well to ensure the chicken is fully coated.
- Heat oil in a skillet over medium heat. Once hot, add the chicken mixture.
- Cook the chicken until fully cooked through, about 7-10 minutes, ensuring it is no longer pink in the center. Stir occasionally.
2- Prepare the Black Bean Mixture:
- In a pot, combine black beans, diced tomatoes with green chilies, and chicken bouillon.
- Cover and cook over medium heat for 3-4 minutes, stirring occasionally until heated through.
3- Prepare the Cilantro Lime Rice:
- In a bowl, mix the cooked rice with lime juice and cilantro. Combine well until the rice is fragrant and evenly mixed.
4- Assemble the Burrito:
- Lay a tortilla flat on a surface. Layer the desired amount of cheese, cilantro lime rice, black bean mixture, and chipotle chicken.
- Add additional toppings such as queso, pico de gallo, guacamole, and sour cream.
- Fold the sides of the tortilla over the filling, then roll the burrito tightly.
5- Toast the Burrito:
- Heat a skillet on medium heat. Place the burrito seam side down and toast until golden brown.
- Flip and toast the other side for a crispy, warm finish.
