Ingredients
Popcorn Tofu
🥢 2 Blocks High-Protein Extra-Firm Tofu
🌶️ 1 Tbsp Black Pepper
🥥 3 Tbsp Coconut Aminos
🌽 2 Cups Maïzly's Original Corn Milk
🌽 1.5 Cup Cornstarch
Korean Glaze
🥥 1/3 Cup Coconut Aminos or Soy Sauce
💧 1/3 Cup Water
🍅 2 Tbsp Ketchup
🌶️ 3 Tbsp Gochujang Paste
🍚 2 Tbsp Rice Vinegar
🍁 5 Tbsp Maple Syrup
Sweet Sticky Rice
🍚 4 Cups Sticky Rice, Cooked
🍚 3 Tbsp Rice Vinegar
🌿 1 Tbsp Agave Syrup
🧂 2 Tsp Salt
Garnishes
🧅 Chopped Green Onions
🌾 Sesame Seeds
Instructions
1- Prepare Crispy Popcorn Tofu:
- Press the high-protein extra-firm tofu to remove excess water.
- Cut the pressed tofu into bite-sized cubes.
- In a large bowl, mix 1 Tbsp black pepper, 3 Tbsp coconut aminos, and 2 cups Maïzly's Original Corn Milk.
- Add the tofu cubes to the mixture and marinate for 15 minutes.
- Drain the marinade from the tofu and coat the cubes thoroughly with 1.5 cups of cornstarch.
- Air fry the coated tofu at 400°F (200°C) for 15 minutes, or bake at 425°F (220°C) for 18–20 minutes until they are crispy and golden brown.
2- Make Korean Glaze:
- In a white ceramic non-stick saucepan, combine the ingredients for the glaze.
- Simmer over medium heat for 7–10 minutes, stirring occasionally until it thickens.
- Toss the crispy tofu in the glaze until all cubes are evenly coated.
3- Prepare Sweet Sticky Rice:
- Cook 4 cups of sticky rice as per package instructions.
- Transfer cooked rice to a bowl; mix in 3 tbsp rice vinegar, 1 tbsp agave, and 2 tsp salt thoroughly.
4- Assemble:
- Distribute the sweet sticky rice evenly among four meal prep containers.
- Portion the glazed popcorn tofu into the containers alongside the rice.
- Garnish with chopped green onions and sesame seeds.
