What Is Your Favorite Food and Why?

I love so many foods. The majority of which are core African foods like Eko, a type of beans and yams traditionally prepared and sold in the state where I reside, Efo ri ro, Ewedu, etc. But my favorite is the African salad. Just the same way we have the English salad. It is prepared locally without cooking any of the condiments used in its preparation.
Some of the items used in preparing them include the local ngo or potash, palm oil, ukpaka, dried or smoked fish, onion, vegetable, Canda, and sliced cassava.
To make the African salad, you soak the cassava with hot or cold water for a few minutes, mix the oil with ngo and ehuru, which gives it a wonderful aroma that is irresistible, add crayfish and pepper, but bear in mind that you must stir till the oil turns yellow and a little thick to avoid melting away when Maggi and salt are added. Finally, you add the sliced cassava and vegetables and mix very well. Serve with the prepared Canda, smoked or dried fish.
I love African salad because it is nutritious and contains almost all six major nutrients, making it a balanced meal. It is a rich cultural meal served at traditional marriages, traditional events like the crowning of kings, and rich cultural heritage events. It is widely known and eaten in the eastern part of my country and can be served with a local palm wine or Ngwo.
Amongst my siblings, only my eldest sister and I can prepare it very well because we were attached to my late mum and always with her in the kitchen while she prepared it. So, I learnt it from her. It was also used as a welcome meal anytime we have a special guest in our home. My siblings and I are always excited when we hear we are making African salad at our house.
Additionally, it has become a special culture and heritage I inherited from my parents' house down to my own home, as I do not miss preparing African salad for my family every Saturday. It has become a heritage and signature for my immediate family, and everyone looks forward to a Saturday African salad Lunch.
