Pancakes for My Kids' Lunch Box

How are you all? I hope everyone is fine and enjoying their day. Today I want to share a very easy pancake recipe that I made for my children's lunch box. My kids like homemade food, so I always try to make something tasty for them instead of giving them packaged snacks.
This morning I decided to make pancakes because they are quick to prepare and children love them. The best thing about pancakes is that they are soft, delicious, and can be served with different fruits. They are also easy to pack in a lunch box.
Ingredients
2 cups flour
1 tablespoon baking powder
3 eggs
1/2 cup milk
1/2 cup oil
Lemon ecence
Sugar according to taste
Method
First, I took a large bowl and added the flour and baking powder salt and sugar mix it well.
And Then took another bowl add the eggs, milk, oil and mix it well. After that, I mixed dry ingredients in it.and mix with spatula well until you got a smooth batter. The batter should not be too thick or too thin.
Next, I heated a non-stick pan on medium heat. I added a few drops of oil to the pan. Then I poured some batter into the pan and let it cook for a few minutes. When small bubbles started to appear on the top, I turned the pancake over and cooked the other side until it became light golden.
I repeated the same process until all the batter was finished.
Soon, a plate full of soft and fluffy pancakes was ready.
Lunch Box Preparation
After the pancakes cooled down a little, I packed them in my children's lunch boxes. Pancakes can be served with many fruits. You can add any fruit that your children like.
My children love mangoes very much, so I served the pancakes with fresh mango slices. Mango is one of their favorite fruits, especially during the summer season. They were very happy when they saw mangoes in their lunch boxes.
I think adding fruit makes the meal more colorful and enjoyable. It is also a good way to encourage children to eat more fruit. Sometimes you can add bananas, apples, grapes, or strawberries, depending on what is available at home and what your children enjoy eating.
My Experience
The pancakes turned out very soft and tasty. The recipe was simple and did not take much time. My children enjoyed them a lot and finished everything in their lunch boxes. That always makes me happy because I know they are eating fresh homemade food.
