Roasted Glutinous Rice Dodol
Hi bloggers, today I'm going to make our traditional dessert, it's sweet, chewy and sticky, which is of course made from roasted sticky rice and coconut sugar. We called it Dodol Ketan Sangrai or Roasted Glutinous Rice Dodol. We usually make this food on special occasions such as celebrations. Okay, let's get started.
Ingredients:
- 300 grams of sticky rice
- 200 grams of coconut sugar
- 3 pandan leaves
- 350 ml coconut milk
- 100 grams sugar
- a pinch of salt
- 150 ml water
Steps:
Wash the sticky rice and soak for 2 hours
Drain
- Roast in a pan and add 2 pandan leaves for 20 minutes
Once cooled, put it in a chopper and blend
Set aside
- Put the coconut sugar in a pan along with a pinch of salt, pandan leaves, and water
- Cook until the sugar dissolves
- Add coconut milk and sugar, then cook until boiling
- Once it starts boiling, add the blended sticky rice
- Stir until smooth and thick like this
Mold in a baking pan or place on a plate like this
Wait until cool
- Roasted glutinous rice dodol is ready to serve
