Lepat Bugis: Sticky Rice Dumplings

Hi bloggers and food lovers! Today I’m going to introduce one of Indonesia’s traditional dishes from West Sumatra called lepat bugis, or sticky rice dumplings. This dish is made from glutinous rice flour that’s steamed and wrapped in banana leaves, with a filling of shredded coconut and chopped peanuts inside. It's sweet, chewy, and crunchy. Okay, let’s get right to it

Ingredients:

  • 1 kg glutinous rice flour
  • 100 grams rice flour
  • 500 ml coconut milk
  • 500 grams shredded coconut
  • vanilla powder
  • 100 grams roasted peanuts
  • 500 grams of sugar
  • 2 tsp of salt
  • young banana leaves
  • cooking oil

Steps:

Filling:

  • Place the shredded coconut in a bowl and add the coarsely ground fried peanuts

  • Add the granulated sugar and 1 tsp of salt on top

  • Stir until well combined

  • Set the filling aside

Sticky Rice Dumplings:

  • Place the glutinous rice flour in a bowl

  • Add the rice flour , vanilla powder, and a pinch of salt

  • Pour in the coconut milk until the mixture reaches a thick consistency, mix them and do not let it become too soft

  • Take a young banana leaf that has been cut into a square shape

  • Coat the young banana leaf with cooking oil to prevent sticking after cooking

  • Place the glutinous rice dough on top of the banana leaf

  • Flatten the dough, then place the shredded coconut filling inside

  • Fold the edges to enclose the filling

  • Wrap the young banana leaves into this shape

  • Repeat the process until all the dough is used up

  • Steam the sticky rice dumplings for 15 minutes until the leaves wilt

  • Let the sticky rice dumplings cool, then serve cold

  • Lepat Bugis/sticky rice dumplings are ready to eat
