Turkish Ezme: A Flavorful Turkish Salsa

Turkish Ezme is a zesty and vibrant salsa-like dip, perfect for appetizers or as a complement to any meal. Originating from Turkish cuisine, this dish is bursting with fresh ingredients such as tomatoes, peppers, and herbs, creating an explosion of flavors. Typically served as a dip with flatbread, it's a refreshing, healthy addition to any spread.

Ingredients

πŸ… 3-4 medium tomatoes
🌢️ 1 medium red bell pepper
πŸ«‘ 1 medium green bell pepper
πŸ§… 1 small onion
🌿 1 small bunch of fresh parsley
πŸ‹ 1 whole lemon
🌢️ 2 green chilis
πŸ§„ 1-2 cloves of garlic
πŸ‡ 1-2 teaspoons sumac
πŸ… 1-2 tablespoons tomato paste (from a tube)
πŸ«’ 2-3 tablespoons olive oil

Instructions

1- Prepare the Vegetables:

  • Begin by quartering the tomatoes.
  • Core and roughly chop the red and green bell peppers.
  • Peel and quarter the onion.
  • Peel the garlic cloves.
  • Roughly chop the green chilis.

2- Blend the Ingredients:

  • Place the prepared tomatoes, bell peppers, onion, green chilis, and garlic into a food processor.
  • Add a bunch of fresh parsley.
  • Squeeze the juice of the lemon directly into the food processor to capture all the freshness.

3- Add Seasonings:

  • Include 1-2 teaspoons of sumac.
  • Add 1-2 tablespoons of tomato paste.
  • Drizzle 2-3 tablespoons of olive oil over the mixture.

4- Process the Mixture:

  • Blend the ingredients in the food processor until finely chopped, maintaining enough texture to avoid a smooth paste.

5- Strain the Mixture:

  • Transfer the mixture onto a clean kitchen towel or cheesecloth.
  • Gently gather the towel around the mixture and squeeze to remove some of the excess liquid, ensuring the blend isn’t too dry.

6- Serve:

  • Once strained, transfer the Ezme to a serving bowl. It's best served cold, so consider refrigerating briefly before serving to enhance the flavors.

Cooking Tips

  • For a chunkier texture, pulse the ingredients slowly, checking the consistency frequently.
  • Straining is crucial to prevent the Ezme from becoming too watery, which can dull the flavors.
