Ingredients

๐ŸŸ 2 cans Tuna in olive oil (approximately 200g / 7 oz)
๐Ÿฅ– 1/2 cup (60g) Breadcrumbs
๐Ÿง€ 1/2 cup (50g) Grated Parmesan cheese
๐Ÿฅš 1 large Egg
๐Ÿ… 1 teaspoon Tomato Paste 2.5g
๐ŸŒฟ 1-2 stalks, finely chopped Scallions
๐Ÿ—ก๏ธ 1-2 tablespoons Chopped Capers
๐Ÿซ’ 1/4 cup Chopped dark olives (e.g., Kalamata)
๐Ÿ‹ Zest of 1 whole Lemon
๐Ÿ‹ Juice of 1/2 Lemon
๐ŸŒฟ 1/4 cup Fresh Parsley, chopped
๐ŸŒฟ 1 teaspoon Dried Oregano
๐Ÿซ’ 2-3 tablespoons Olive Oil for cooking

For Serving (Yogurt Aioli)

๐ŸŒฟ Fresh and dried Dill
๐ŸŒฟ Dried Oregano


Instructions

1- Prepare the Ingredients:

  • Drain the tuna, preserving some of the oil. Transfer the tuna into a large mixing bowl.

2- Mix Base Ingredients:

  • Add the breadcrumbs, grated Parmesan, egg, and tomato paste to the tuna.
  • Incorporate the finely chopped scallions, capers, and olives into the mixture.

3- Add Fresh Flavors:

  • Grate the zest of a lemon directly into the bowl and add the lemon juice.
  • Add the chopped parsley and dried oregano.

4- Combine Ingredients:

  • Mix all the ingredients thoroughly by hand, applying enough pressure to ensure the mixture holds together.

5- Shape the Patties:

  • Form the mixture into small, flat patties, roughly the size of your palm.

6- Cook the Patties:

  • Heat the olive oil in a non-stick frying pan (KitchenAid brand) over medium heat.
  • Place the patties in the hot pan and cook for about 3-4 minutes on each side until they turn golden brown and are thoroughly cooked.

7- Serve:

  • Serve the patties warm, complemented by a squeeze of fresh lemon and yogurt aioli as a dipping sauce.
