Tuna Patties
Introduction
Experience the vibrant flavors of the Mediterranean with these scrumptious and protein-packed tuna patties. Quick to prepare using pantry staples, they offer a delightful combination of taste and texture, perfect as a main course or an appetizer.
Ingredients
๐ 2 cans Tuna in olive oil (approximately 200g / 7 oz)
๐ฅ 1/2 cup (60g) Breadcrumbs
๐ง 1/2 cup (50g) Grated Parmesan cheese
๐ฅ 1 large Egg
๐
1 teaspoon Tomato Paste 2.5g
๐ฟ 1-2 stalks, finely chopped Scallions
๐ก๏ธ 1-2 tablespoons Chopped Capers
๐ซ 1/4 cup Chopped dark olives (e.g., Kalamata)
๐ Zest of 1 whole Lemon
๐ Juice of 1/2 Lemon
๐ฟ 1/4 cup Fresh Parsley, chopped
๐ฟ 1 teaspoon Dried Oregano
๐ซ 2-3 tablespoons Olive Oil for cooking
For Serving (Yogurt Aioli)
๐ฅ Yogurt
๐ฟ Fresh and dried Dill
๐ฟ Dried Oregano
Instructions
1- Prepare the Ingredients:
- Drain the tuna, preserving some of the oil. Transfer the tuna into a large mixing bowl.
2- Mix Base Ingredients:
- Add the breadcrumbs, grated Parmesan, egg, and tomato paste to the tuna.
- Incorporate the finely chopped scallions, capers, and olives into the mixture.
3- Add Fresh Flavors:
- Grate the zest of a lemon directly into the bowl and add the lemon juice.
- Add the chopped parsley and dried oregano.
4- Combine Ingredients:
- Mix all the ingredients thoroughly by hand, applying enough pressure to ensure the mixture holds together.
5- Shape the Patties:
- Form the mixture into small, flat patties, roughly the size of your palm.
6- Cook the Patties:
- Heat the olive oil in a non-stick frying pan (KitchenAid brand) over medium heat.
- Place the patties in the hot pan and cook for about 3-4 minutes on each side until they turn golden brown and are thoroughly cooked.
7- Serve:
- Serve the patties warm, complemented by a squeeze of fresh lemon and yogurt aioli as a dipping sauce.
