This vibrant and fresh protein green goddess salad is a healthy and delicious main course. It's a delightful mix of crisp vegetables and tangy, creamy dressing, perfect as a standalone meal or a hearty side dish. Infused with the goodness of whole foods, it's a testament to healthier eating—without compromising on flavor.
Ingredients
Salad Ingredients:
🥬 1/2 head green cabbage
🥒 1 large cucumber
🥫 1 can Goya butter beans
🧅 1 bunch green onions
🥗 1 head romaine lettuce
🌿 Optional: hemp seeds
🥨 Optional: tortilla chips
Dressing Ingredients:
🌿 1 cup basil leaves
🍃 1 cup spinach
🧄 2 cloves garlic
🧅 1 small shallot
🍋 Juice of 2 lemons
🫒 1/4 cup olive oil
🥜 1/4 cup cashews
🧀 1/3 cup Parmesan cheese
🧂 1 teaspoon salt
🧉 2 tablespoons rice vinegar
🥛 250g silken tofu
Instructions
1- Prepare the Salad Base:
- Finely chop 1/2 head of green cabbage and 1 head of romaine lettuce into bite-sized pieces.
- Dice 1 large cucumber into small cubes, and slice 1 bunch of green onions.
- Combine the chopped cabbage, romaine, cucumber, and green onions in a large mixing bowl.
- Drain and rinse 1 can of Goya butter beans, then add them to the salad mixture.
2- Prepare the Green Goddess Dressing:
- In a Nutribullet blender, combine 1 cup of basil leaves, 1 cup of spinach, 2 cloves of garlic, 1 small shallot, the juice of 2 lemons, 1/4 cup of olive oil, 1/4 cup of cashews, 1/3 cup of Parmesan cheese, 1 teaspoon of salt, 2 tablespoons of rice vinegar, and 250g of silken tofu.
- Blend until the mixture is smooth and creamy.
3- Assemble the Salad:
- Pour the green goddess dressing over the salad in the large mixing bowl.
- Use wooden salad servers to toss the salad thoroughly, ensuring all components are evenly coated with the dressing.
4- Serve:
- Sprinkle with hemp seeds if desired for extra protein.
- Serve immediately with tortilla chips for scooping.
