
High-Protein Turkey Enchiladas

Ingredients
๐ซ 2 tbsp extra-virgin olive oil

1 medium white onion, diced
๐ 1 lb ground turkey
๐ซ 1 (15-16 oz) can refried beans
๐ง 1/4 - 1/2 cup water
๐ง 1-1.5 cups shredded cheese, Monterey Jack or mild cheddar
๐ฎ Gluten-free tortillas, 5-6 count
๐ฅซ 1 (10-12 oz) can store-bought enchilada sauce
๐ Small bunch of cilantro, chopped
๐ง Garlic cloves, minced, quantity to taste
๐ถ๏ธ Taco seasoning, to taste
Instructions
1- Preheat the Oven:
- Preheat your oven to 350ยฐF (175ยฐC).
2- Prepare the Turkey Mixture:
- In a stainless steel frying pan, drizzle some olive oil and heat over medium flame.
- Add the diced onion and ground turkey to the pan.
- Use a meat chopper/masher to break up the turkey. Cook until browned.
3- Add Additional Ingredients:
- Stir in the refried beans, carefully adding water and minced garlic.
- Add taco seasoning to taste, stirring well with a wooden spoon until the mixture is thoroughly combined and heated.
4- Shred the Cheese:
- Using a box grater, shred your choice of cheese.
5- Fill and Roll Tortillas:
- Lay each gluten-free tortilla flat on a cutting board.
- Spoon a generous portion of the turkey-bean mixture onto the center of each tortilla.
- Sprinkle the grated cheese over the filling.
- Roll up each tortilla tightly and place seam-side down in an oven-safe baking dish.
6- Top with Sauce and Cheese:
- Pour the enchilada sauce evenly over the rolled tortillas.
- Heavily sprinkle more shredded cheese over the sauce.
7- Bake the Enchiladas:
- Bake in the preheated oven until the cheese is bubbly and slightly golden, about 15-20 minutes.

8- Garnish and Serve:
