High-Protein Pepperoni Pizza

Ingredients

๐ง 1/2 tsp 3g Salt
๐ฑ 1/4 cup 30g Vital Wheat Gluten
๐ซ 1/2 tsp 2g Olive oil
๐งฌ 1/2 tsp 1.5g Instant yeast

3 tbsp 45g Pizza sauce
๐ง 6 oz 170g Non-fat mozzarella
๐ 22 slices Low-fat turkey pepperoni
Instructions
1- Mix Dry Ingredients:
- In the KitchenAid stand mixer bowl, combine all-purpose flour, Bob's Red Mill vital wheat gluten, instant yeast, and salt.
2- Combine with Liquids:
- Gradually add warm water while mixing until a dough forms.
3- Knead the Dough:
- Knead using the mixer for 5-8 minutes until dough is smooth and elastic.
4- Rest the Dough:
- Cover the dough with a cloth or your HEXCLAD apron and let it rest for 15 minutes.
5- Preheat the Oven:
- Preheat your Bosch oven to 500ยฐF (260ยฐC).
6- Prepare the Pizza Base:
- On a parchment-lined baking tray, roll out the dough using a rolling pin with a black handle.
7- Par-bake:
- Place the dough into the oven and par-bake for 3 minutes.
8- Add Toppings:
- Remove the par-baked crust and spread the pizza sauce evenly.
- Sprinkle with non-fat mozzarella cheese and arrange low-fat turkey pepperoni slices on top.
9- Final Bake:
- Return the pizza to the oven and bake for an additional 5 minutes until the cheese is melted and bubbling.
10- Serve:
- Using a spatula or pizza server, slice and serve hot.
