Tomato Pesto Tart

Ingredients
🍅 3 large ripe tomatoes
🫓 1 sheet of puff pastry
🌿 1/3 cup basil pesto
🧀 1/2 cup ricotta cheese
🧂 1/4 teaspoon salt
🌿 1/4 teaspoon black pepper
🧴 1 tablespoon olive oil
🧄 2 cloves garlic, minced
🥄 1 tablespoon balsamic glaze
🌱 Fresh basil leaves for garnish
Instructions
1- Preheat the oven:
- Begin by preheating your oven to 400°F (200°C).
2- Prepare the pastry:
- Roll out the puff pastry on a lightly floured surface into a rectangle shape approximately the size of a baking sheet.
- Place it on a parchment-lined baking tray.
3- Dock and bake the pastry:
- Using a fork, prick the pastry all over, leaving a 1-inch border around the edges free of pricks.
- This helps to prevent the center from puffing up during baking.
- Bake in the preheated oven for 10-12 minutes until it's slightly golden.
4- Prepare the filling:
- While the pastry is baking, mix the ricotta cheese with minced garlic, salt, and pepper in a small bowl.
- Set aside.
5- Assemble the tart:
- Once the pastry is lightly golden, spread the basil pesto evenly over the center, avoiding the border.
- Then, dollop spoonfuls of the seasoned ricotta cheese across the surface.
6- Add tomatoes:
- Slice the tomatoes evenly and arrange them over the ricotta cheese mixture.
- Drizzle them with olive oil and sprinkle with a bit more salt and pepper.
7- Bake the tart:
- Return the tart to the oven and bake for an additional 15-20 minutes, or until the pastry edges are golden and crisp.
8- Finish and serve:
- Remove the tart from the oven and let it cool slightly.
- Drizzle the balsamic glaze over the top, garnish with fresh basil leaves, and serve warm or at room temperature.
