Smashed Potatoes

Ingredients
For the Smashed Potatoes:
๐ฅ 1.5 to 2 pounds of baby potatoes
๐ซ 4 tablespoons olive oil
๐ฐ 1/2 teaspoon onion powder
๐ถ๏ธ 1/2 teaspoon chili powder
๐ 1/2 teaspoon lemon pepper
๐ง 1/2 teaspoon garlic powder
๐ถ๏ธ 1/2 teaspoon paprika
๐ฟ 1/2 teaspoon rosemary
๐ง 1/2 teaspoon salt
๐ฟ 1 teaspoon dried parsley or fresh
For the Creamy Mayo Sauce:
๐ฅ 1/2 cup mayonnaise
๐ฅ 1 tablespoon Dijon mustard
๐ฟ 1 tablespoon parsley, finely chopped
๐ Juice of half a lemon
๐ 1/8 teaspoon black pepper
Instructions
1- Prepare the Potatoes:
- Boil the baby potatoes in salted water for about 20 to 25 minutes, or until they are fork-tender.
- Once cooked, drain them thoroughly.
2- Season and Smash:
- Preheat your oven to 400ยฐF (200ยฐC).
- In a large bowl, gently toss the cooked potatoes with olive oil and all the spices.
- Ensure that each potato is well coated.
- Place the seasoned potatoes on a baking sheet lined with parchment paper.
- Using a heavy glass or the palm of your hand, gently smash each potato until slightly flattened.
3- Bake:
- Transfer the baking sheet to the preheated oven.
- Bake the potatoes for 45 to 50 minutes, or until they are golden brown and crispy around the edges.
4- Prepare the Sauce:
- While the potatoes are baking, combine the mayonnaise, Dijon mustard, chopped parsley, lemon juice, and black pepper in a small bowl.
- Mix until smooth and well combined.
5- Serve:
- Once the potatoes are done, remove them from the oven and let them cool slightly.
- Serve the smashed potatoes warm.
- Pair with the creamy mayo sauce on the side for dipping.
