Smashed Potatoes

Ingredients

For the Smashed Potatoes:
๐Ÿฅ” 1.5 to 2 pounds of baby potatoes
๐Ÿซ’ 4 tablespoons olive oil
๐ŸŒฐ 1/2 teaspoon onion powder
๐ŸŒถ๏ธ 1/2 teaspoon chili powder
๐Ÿ‹ 1/2 teaspoon lemon pepper
๐Ÿง„ 1/2 teaspoon garlic powder
๐ŸŒถ๏ธ 1/2 teaspoon paprika
๐ŸŒฟ 1/2 teaspoon rosemary
๐Ÿง‚ 1/2 teaspoon salt
๐ŸŒฟ 1 teaspoon dried parsley or fresh

For the Creamy Mayo Sauce:
๐Ÿฅ„ 1/2 cup mayonnaise
๐Ÿฅ„ 1 tablespoon Dijon mustard
๐ŸŒฟ 1 tablespoon parsley, finely chopped
๐Ÿ‹ Juice of half a lemon
๐ŸŒ‘ 1/8 teaspoon black pepper


Instructions

1- Prepare the Potatoes:

  • Boil the baby potatoes in salted water for about 20 to 25 minutes, or until they are fork-tender.
  • Once cooked, drain them thoroughly.

2- Season and Smash:

  • Preheat your oven to 400ยฐF (200ยฐC).
  • In a large bowl, gently toss the cooked potatoes with olive oil and all the spices.
  • Ensure that each potato is well coated.
  • Place the seasoned potatoes on a baking sheet lined with parchment paper.
  • Using a heavy glass or the palm of your hand, gently smash each potato until slightly flattened.

3- Bake:

  • Transfer the baking sheet to the preheated oven.
  • Bake the potatoes for 45 to 50 minutes, or until they are golden brown and crispy around the edges.

4- Prepare the Sauce:

  • While the potatoes are baking, combine the mayonnaise, Dijon mustard, chopped parsley, lemon juice, and black pepper in a small bowl.
  • Mix until smooth and well combined.

5- Serve:

  • Once the potatoes are done, remove them from the oven and let them cool slightly.
  • Serve the smashed potatoes warm.
  • Pair with the creamy mayo sauce on the side for dipping.
