Ingredients
🍤 500g cooked shrimp, peeled and chopped
🥒 1 cucumber, chopped
🍅 2 tomatoes, chopped
🧅 1 red onion, diced
🌶️ 1 jalapeño, finely chopped
🌿 A handful of cilantro, chopped
🍋 Juice of 4 lemons
🧂 Salt to taste
🧂 Black pepper to taste
Instructions
1- Prepare the Ingredients:
- Begin by peeling and chopping the cooked shrimp into bite-sized pieces.
- Dice the red onion, cucumber, and tomatoes into small, even pieces to ensure a consistent texture.
- Carefully remove the seeds from the jalapeño to reduce heat, then finely chop it.
- Chop the cilantro leaves for a burst of fresh flavor.
2- Combine the Mixture:
- In a large mixing bowl, combine the chopped shrimp, cucumber, tomatoes, red onion, jalapeño, and cilantro.
3- Marinate:
- Squeeze the juice of 4 fresh lemons over the mixture in the bowl. The acidity from the lemons will meld the flavors together.
- Season generously with salt and black pepper to taste.
4- Mix and Marinate:
- Gently mix all the ingredients until they are well combined.
- Let the ceviche sit and marinate in the fridge for at least 30 minutes to an hour to allow the flavors to develop and meld perfectly.
5- Serve:
- Serve the chilled shrimp ceviche with a side of crispy tortilla chips. For added appeal, garnish with extra cilantro or lemon wedges.
