Sheet Pan Salmon

Perfectly cooked salmon is paired with a medley of roasted vegetables and a sweet, tangy marinade for a dish that will transport your taste buds. Ingredients
π 1 salmon fillet
π« 200g green beans

1 red onion, sliced

150g cherry tomatoes
π 1 lemon, sliced
πΏ Fresh parsley for garnish
For the Marinade:
π 2 tablespoons lemon juice
π« 3 tablespoons olive oil
π§ 1 teaspoon ginger powder
π§ 1 teaspoon garlic powder
π§ 1 teaspoon salt
π― 1 tablespoon pomegranate molasses

1 tablespoon tomato paste
π― 1 tablespoon honey
Instructions
1- Preheat the Oven:
- Set your oven to 200Β°C (390Β°F).
2- Prepare the Marinade:
- In a large mixing bowl, combine the lemon juice, olive oil, ginger powder, garlic powder, salt, pomegranate molasses, tomato paste, and honey.
- Mix well until fully incorporated.
3- Marinate the Salmon:
- Place the salmon fillet on a parchment-lined sheet pan.
- Drizzle half of the prepared marinade over the salmon and rub it in gently to ensure it's evenly coated.
4- Prepare the Vegetables:
- Add the green beans, red onion slices, and cherry tomatoes to the bowl with the remaining marinade.
- Toss to coat the vegetables thoroughly.
5- Assemble the Sheet Pan:
- Arrange the marinated vegetables around the salmon on the sheet pan.
- Place lemon slices on top of the salmon for extra flavor.
6- Bake:
- Place the sheet pan in the preheated oven and bake for 25-30 minutes.
- The salmon should be cooked through, easily flake with a fork, and the vegetables should be tender.
7- Garnish and Serve:
- Remove the sheet pan from the oven and allow it to rest for a couple of minutes.
- Garnish with freshly chopped parsley and serve hot.
