Roasted Potatoes

Ingredients

🥔 5 medium potatoes
🫒 1/3 cup olive oil
🧂 1 teaspoon salt
🌶️ 1 teaspoon curry powder
🌕 1/2 teaspoon turmeric
⚫ 1/2 teaspoon black pepper
🌶️ 1/2 teaspoon chili flakes
🧄 3 cloves garlic, minced
🍋 Juice of half a lemon
🌿 Fresh parsley, for garnish


Instructions

1- Prep the Potatoes:

  • Wash the potatoes thoroughly.
  • Place them in the microwave and heat on high for 9 minutes. This step will help soften the potatoes slightly before roasting.

2- Prepare the Spice Mixture:

  • In a large mixing bowl, combine the olive oil, salt, curry powder, turmeric, black pepper, chili flakes, minced garlic, and lemon juice.
  • Stir well to create a homogenized spice mix.

3- Cut and Coat the Potatoes:

  • Once the potatoes have cooled enough to handle, cut them into 1-inch cubes.
  • Add the cubed potatoes to the bowl with the spice mixture and toss until all pieces are evenly coated.

4- Bake the Potatoes:

  • Preheat your oven to 400°F (200°C).
  • Arrange the spice-coated potatoes in a single layer on a baking tray.
  • Roast in the preheated oven for about 35 minutes or until the potatoes are golden brown and crispy on the edges.

5- Garnish and Serve:

  • Remove the potatoes from the oven and let them cool slightly.
  • Sprinkle fresh parsley on top for a vibrant touch before serving.
