Delight in a fusion of Middle Eastern and Italian flavors with these Ricotta Baklawa Bites. Perfect for a quick yet elegant dessert or snack, these bites combine creamy ricotta, aromatic cardamom, and crunchy pistachios nestled in a crisp phyllo shell. Drizzled with a fragrant syrup, each bite promises a delightful contrast of textures and flavors.

Ingredients

For the Baklawa Bites:
🧀 1 cup whole milk ricotta cheese
🍬 1/4 cup sugar
🧂 1/2 teaspoon cardamom
🥧 1 package of phyllo shells (15 cups)
🍯 1/2 cup simple syrup or corn syrup (for drizzling)
🥜 2 tablespoons ground pistachios

For the Simple Syrup (optional):
🍬 2 cups sugar
💧 1 cup water
🍋 1 teaspoon lemon juice
🌸 1 teaspoon orange blossom water or rose water (optional)


Instructions

1- Prepare the Simple Syrup:

  • In a saucepan over medium-high heat, combine 2 cups of sugar, 1 cup of water, and 1 teaspoon of lemon juice.
  • Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes until slightly thickened.
  • If desired, add 1 teaspoon of orange blossom water or rose water for extra aroma. Set aside to cool.

2- Preheat the Oven:

  • Preheat your oven to 350°F (175°C).

3- Prepare the Ricotta Filling:

  • In a bowl, mix together 1 cup of ricotta cheese, 1/4 cup of sugar, and 1/2 teaspoon of cardamom until well combined and smooth.

4- Fill the Phyllo Shells:

  • Arrange the phyllo shells on a baking tray.
  • Fill each shell with approximately 1 teaspoon of the ricotta mixture.

5- Bake:

  • Place the tray in the preheated oven and bake for about 20 minutes, or until the ricotta mixture is set and the shells are golden and crispy.

6- Finish with Garnishes:

  • Once out of the oven, drizzle each baklawa bite generously with the prepared simple syrup or corn syrup.
  • Sprinkle with ground pistachios for a crunchy and colorful finish.

7- Serve:
