- Mince the celery, carrots, onions, and garlic using a food processor to a finely chopped consistency.
2- Sauté the Vegetables:
- In a large oven-safe pot or Dutch oven, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium-high heat.
- Add the minced vegetables, season with 1/2 teaspoon salt and black pepper, and cook for 6-8 minutes until softened and translucent.
3- Brown the Meat:
- Add the tomato paste to the pot, cooking for 5 minutes to develop a deeper flavor.

- Pour in 2 cups of chicken stock and the canned crushed tomatoes.
- Stir in oregano, chili flakes, 1/2 tablespoon salt, and 1/2 teaspoon black pepper.

- Carefully remove from the oven. Stir in heavy cream and Parmesan cheese.
- Return to the oven for an additional 45 minutes to an hour, stirring once during this period.
7- Cook the Pasta:
- While the sauce finishes in the oven, boil the Mezzi Rigatoni according to package instructions, then drain.
