No Bake Chocolate Eclair Cake

Perfect for a gathering or a special treat during Ramadan, this cake combines the creamy texture of vanilla pudding, layered with tender lady fingers and finished off with a rich chocolate ganache. Ingredients

Pudding Mixture:
📦 1 (5.1 oz) family size vanilla Instant pudding mix
🥛 3 cups whole milk (for the pudding)
🥄 1 (8 oz) container of cool whip (thawed)
🍰 44 lady fingers
🥛 2 cups milk (for dipping the lady fingers)

Chocolate Ganache:
🍫 1.5 cups chocolate chips
🍶 1.5 cups heavy cream

Garnish:
🍪 Crushed lady fingers


Instructions

1- Prepare the Pudding Mixture:

  • In a large bowl, mix the vanilla pudding mix with 3 cups of milk until well blended.
  • Gently fold in the thawed cool whip until evenly combined.

2- Layer the Lady Fingers:

  • Pour 2 cups of milk into a small bowl.
  • Quickly dip each lady finger into the milk—ensure they are not soaked—and place them in a single layer on the bottom of a 9x13-inch baking dish. This should be 22 lady fingers.

3- Add Pudding Layers:

  • Spread half of the pudding mixture over the layered lady fingers evenly.
  • Add another layer of dipped lady fingers on top, using the remaining 22, and spread the rest of the pudding mixture over these.

4- Prepare the Chocolate Ganache:

  • Place the heavy cream into a microwave-safe bowl and heat in the microwave for about 2 minutes until hot.
  • Add the chocolate chips to the hot cream and let it sit for 4–5 minutes. Afterward, whisk together until smooth and fully combined.

5- Finish the Cake:

  • Pour the warm ganache over the pudding layers, spreading it smoothly across the top.
  • Refrigerate the cake until the ganache is set. Before serving, garnish with crushed lady fingers.
