Lotus Cookie Trifle

Ingredients

🍪 2 packs of Lotus cookies
🥛 2 cups of milk
🥛 1 cup of heavy whipping cream
🌽 3 tablespoons of corn starch
🍬 1/2 cup of sugar
🍨 1 tablespoon of vanilla extract
☕ 2 tablespoons of instant coffee
🍫 1 cup of chocolate chips
🥛 1/4 cup of milk for melting chocolate


Instructions

1- Prepare the Cream Mixture:

  • In a medium saucepan, combine 2 cups of milk, 1 cup of heavy whipping cream, 1/2 cup of sugar, and 3 tablespoons of corn starch. Mix well until the sugar and corn starch dissolve completely.
  • Place the saucepan over medium-high heat and stir continuously until the mixture begins to thicken. Once thickened, remove from heat and stir in 1 tablespoon of vanilla extract. Set aside to cool slightly.

2- Prepare the Coffee Mixture:

  • In a cup, combine 1 cup of hot water with 2 tablespoons of instant coffee. Stir until the coffee dissolves completely.

3- Layer the Trifle:

  • In a serving dish, quickly dip each Lotus cookie into the coffee mixture and then layer them at the bottom of the dish. Follow with a layer of the prepared cream mixture.
  • Repeat these layers, alternating soaked cookies and cream, until all the ingredients are used, ending with a layer of cream on top.

4- Prepare the Chocolate Topping:

  • In a microwave-safe bowl, combine 1 cup of chocolate chips and 1/4 cup of milk. Microwave in 30-second intervals, stirring after each interval, until the chocolate is fully melted and smooth.
  • Pour the melted chocolate over the top layer of the trifle and spread evenly.

5- Finishing Touches:

  • Crush some Lotus cookies and sprinkle them over the chocolate layer for added texture and flavor.
  • Place the trifle in the refrigerator for at least 2 to 3 hours or until set and thoroughly chilled.

6- Serving:

  • Once set, serve the trifle chilled. This dessert is perfect for sharing and typically yields around 8 servings.
