Lasagna Soup

Transform the traditional lasagna into a comforting bowl of soup with this Lasagna Soup recipe. It combines all the rich flavors of classic lasagna with the ease and speed of a one-pot meal. Perfect for chilly evenings, this soup will quickly become a family favorite.

Ingredients

πŸ– 1 pound ground beef
πŸ§… 1 large onion, diced
πŸ§„ 4 cloves garlic, minced
πŸ₯« 2 heaping tablespoons tomato paste
πŸ§‚ 1 teaspoon salt
🌿 1 teaspoon garlic powder
πŸ§„ 1 teaspoon onion powder
🌢️ 1 teaspoon paprika
🌿 1 teaspoon oregano
🌿 1 teaspoon Italian seasoning
🌢️ 1/2 teaspoon red chili flakes
πŸ… 1 28oz jar marinara sauce (your favorite)
πŸ— 3 cups chicken broth (add more if you want it to be more runny)
🍝 10-12 uncooked lasagna noodles, broken into approx. 1-2 inch pieces
πŸ₯› 1 cup heavy cream
🌿 Fresh basil, a handful chopped

Ricotta Cheese Topping:
πŸ§€ 1 cup Ricotta cheese
πŸ§€ 1/2 cup mozzarella cheese
πŸ§€ 1/2 cup parmesan cheese
🌿 Fresh parsley
🌿 Fresh basil
πŸ§‚ Pinch of salt
πŸ§‚ Pinch of black pepper


Instructions

1- Cooking the Meat:

  • Heat a large Dutch oven or large soup pot over medium-high heat.
  • Add the ground beef and cook until browned.
  • Add the garlic and onion, cooking for about 4-5 minutes until the onion is tender.

2- Adding Paste and Seasonings:

  • Stir in the tomato paste and seasonings.
  • Mix well until the tomato paste is fully combined and let cook for 2-3 minutes.

3- Introducing Liquids:

  • Add the marinara sauce and chicken broth.
  • Stir well, cover, and bring to a boil.

4- Cooking the Noodles:

  • Drop in the broken lasagna noodles.
  • Reduce to a simmer and cook, stirring occasionally, until the noodles are tender (approximately 20-30 minutes).

5- Finalizing the Soup:

  • Once noodles are cooked, stir in the heavy cream and chopped basil.
  • Let simmer for a couple more minutes while you prepare the cheese topping.

6- Preparing the Cheese Topping:

  • In a bowl, combine the Ricotta cheese, mozzarella cheese, Parmesan cheese, parsley, basil, salt, and pepper.
  • Mix well.

7- Serving:

  • Serve the lasagna soup warm, topped with the cheese mixture and additional basil if desired.
