Kurdish Flatbread
Warm, soft, and versatile, Kurdish flatbread is a staple in Middle Eastern cuisine. This simple yet satisfying recipe brings the authentic flavors of Kurdistan right to your kitchen. Ingredients
🍞 5 cups flour
🌿 1 tablespoon baking powder
🧂 1 teaspoon salt
🫒 1/4 cup olive oil
💧 1 and 3/4 cups warm water
🍞 Extra flour for rolling out the dough
Instructions
1- Combine Dry Ingredients:
- In a large mixing bowl, combine the flour, baking powder, and salt.
- Stir these dry ingredients together to ensure an even distribution of the baking powder and salt.
2- Mix Dough:
- Add the olive oil and warm water to the dry ingredients.
- Mix the dough using your hands or a mixer with a dough hook on medium speed for about 5 minutes, until it forms a smooth and elastic dough.
3- Rest Dough:
- Cover the bowl with plastic wrap or a clean kitchen towel and let it rest at room temperature for about 20 minutes.
- This resting time allows the dough to relax and makes it easier to roll out.
4- Divide Dough:
- Once rested, divide the dough into approximately 12 equal portions.
- Shape each portion into a small ball.
5- Roll Dough:
- Flour your work surface lightly.
- Take one dough ball and roll it out into a circular shape, roughly 9 inches in diameter. Repeat for all dough balls.
6- Cook Flatbread:
- Heat a skillet over medium to high heat.
- Once hot, place a rolled-out dough circle onto the skillet. Cook for 1 to 2 minutes or until it begins to puff and form golden spots, then flip and cook the other side for another 1 to 2 minutes.
7- Store Flatbread:
- Remove from skillet and keep covered with a clean kitchen towel to retain softness until ready to serve.
8- Serve:
- Enjoy the flatbread warm, served as you desire!
