Kurdish Baqsome

Ingredients
🥚 3 eggs
🫒 1 cup oil
🧂 1 cup sugar
🍶 1 tablespoon baking powder
🥥 2 cups shredded coconut
🌾 2 and 3/4 cups flour
🌿 Sesame seeds (for coating)
Instructions
1- Preheat Oven:
- Start by preheating your oven to 425°F (220°C).
- Line a baking sheet with parchment paper.
2- Mix Wet Ingredients:
- In a large mixing bowl, break in 3 eggs.
- Add 1 cup of sugar and 1 cup of oil.
- Using a whisk or an electric mixer, blend the ingredients until you have a smooth mixture.
3- Add Baking Powder:
- Incorporate 1 tablespoon of baking powder into the wet ingredients.
- Stir well until everything is combined.
4- Mix in Coconut:
- Gently fold in 2 cups of shredded coconut into the mixture.
- Blend until the coconut is evenly distributed throughout the batter.
5- Add Flour Gradually:
- Gradually add 2 and 3/4 cups of flour to the mixture.
- Add one cup at a time, making sure to fully incorporate the flour before adding more.
- The dough should be firm enough to shape into balls.
6- Shape Cookies:
- Dip your hands in a little oil to prevent sticking.
- Scoop out small portions of the dough, rolling them into balls about 1 to 1.5 inches in diameter based on your preference.
7- Coat with Sesame Seeds:
- Roll each dough ball in sesame seeds until fully coated.
- Place them on the prepared baking sheet, leaving some space between them to allow for spreading.
8- Bake:
- Transfer the baking sheet to the oven.
- Bake for 13-15 minutes, or until the cookies are golden brown on the outside.
9- Cool and Serve:
- Once baked, allow the cookies to cool on a wire rack.
- Enjoy them fresh and warm or store them in an airtight container for later.
