Ingredients

๐Ÿš 2 cups flour
๐Ÿฅ„ 1/2 cup semolina (fine)
๐Ÿฌ 1 tablespoon sugar

๐ŸŒฟ 1/2 teaspoon yeast
๐Ÿ’ง 2 cups warm water (microwaved for 1 minute)
๐Ÿฅ› 1 cup warm milk (microwaved for 1 minute)

Walnut Filling:
๐ŸŒฐ 1 cup crushed walnuts
๐Ÿฌ 1 tablespoon sugar
๐Ÿ‚ 1 teaspoon cinnamon

Pistachio Filling:
๐ŸŒฟ 1 cup crushed pistachios

๐ŸŒป 2 cups of oil for frying


Instructions

1- Prepare the Batter:

  • In a blender, combine flour, semolina, sugar, baking powder, yeast, warm water, and warm milk.
  • Blend until the mixture is smooth and well combined.
  • Cover the batter with plastic wrap and let it rest for 20 minutes to allow yeast activation.

2- Prepare the Fillings:

  • For the walnut filling, mix the crushed walnuts, sugar, and cinnamon in a bowl.
  • For the pistachio filling, use the crushed pistachios as they are.

3- Cooking Atayef:

  • Heat a non-stick pan over medium heat.
  • Pour the batter into the pan, forming small pancake-sized circles.
  • Cook until the surface is dry and the bottom is golden brown.
  • Cover cooked atayef with a clean kitchen towel to keep them soft.

4- Filling Atayef:

  • Once all the pancakes are cooked, place a spoonful of either walnut or pistachio filling onto each.
  • Fold each atayef in half and press the edges firmly to seal.

5- Frying Atayef:

  • Heat oil in a frying pan over medium-high heat.
  • Fry each filled atayef until golden brown.
  • Remove from oil and drain on paper towels.

6- Finishing Touch:

  • Dip the fried atayef in simple syrup or drizzle with honey if desired.
