๐ฟ 1 cup parsley, finely chopped
Dough:
๐พ 2 cups bulgur #1
๐ง 1 cup warm water
๐ฅ 4 medium boiled potatoes, mashed
๐ 1/4 cup flour
๐ง 1 tablespoon salt
๐
2 tablespoons pepper paste or tomato paste
๐งด Oil for dipping hands
๐งด Oil for frying
๐ง Additional water as needed for kneading
Instructions
1- Prepare the Filling:
- In a skillet over medium heat, brown the ground beef until fully cooked.
- Add the chopped onions, salt, curry powder, black pepper, cumin, and chili flakes. Stir well to combine.
- Cook the mixture until the onions are soft and fragrant.
- Stir in the chopped parsley and combine well.
- Remove from heat and allow the filling to cool completely.
2- Prepare the Dough:
- In a large bowl, combine the bulgur and warm water. Let it sit for 10 minutes until the bulgur absorbs the water and becomes soft.
- Add the mashed potatoes, flour, salt, and pepper paste (or tomato paste) to the softened bulgur. Mix thoroughly to form a dough.
- If the dough is too sticky, dip your hands in oil or water to facilitate the kneading.
3- Shape and Fill the Kotalks:
- Take a small portion of the dough and shape it into a ball, about the size of a golf ball.
- Flatten the ball in your palm to create a small patty.
- Place a spoonful of the beef filling in the center of the patty.
- Gently mold the dough around the filling, ensuring the mixture is completely enclosed.
- Repeat the process until all the dough and filling are used.
4- Fry the Kotalks:
- Heat oil in a deep pan to about 350ยฐF (175ยฐC).
- Carefully place the kotalks into the hot oil, a few at a time, to avoid overcrowding.
- Fry until golden brown and crispy, about 5 minutes on each side.
- Remove from the oil and place on paper towels to drain excess oil.
