Easy Chicken Tacos

Ingredients
For the Chicken:
🍗 2 chicken breasts, cut into bite-size pieces
🌿 2 teaspoons adobo
🧄 1 teaspoon garlic powder
🧅 1 teaspoon onion powder
🌶 1 teaspoon chili powder
🌶 1 teaspoon smoked paprika
🌶 1/2 teaspoon cumin
🌶 1/2 teaspoon chili flakes
🧂 1/8 teaspoon salt or to taste
🌿 1/4 cup chopped cilantro
🍋 1 lime, juice of
🫒 3 tablespoons olive oil
🌮 Tortillas (flour or corn)
For the Pico de Gallo:
🍅 3 small tomatoes, finely chopped
🌶 2 small jalapeños, ribs and seeds removed
🧅 1/2 red onion, finely chopped
🌿 1/3 cup finely chopped cilantro
🍋 1/4 cup fresh lime juice
🧂 1/4 teaspoon salt or to taste
🌶 1/8 teaspoon black pepper
For the Cilantro Lime Sauce:
🥄 1/4 cup mayonnaise
🥄 1/4 cup sour cream
🌿 2 tablespoons finely chopped cilantro
🍋 1/4 cup fresh lime juice or to taste
🧂 1/4 teaspoon salt
Instructions
Prepare the Chicken:
- In a bowl, combine chicken, adobo, garlic powder, onion powder, chili powder, smoked paprika, cumin, chili flakes, salt, cilantro, and lime juice. Mix well to coat the chicken. You can cook it immediately or let it marinate for 30 minutes to enhance the flavors.
Toast the Tortillas:
- Heat a nonstick skillet over medium-high heat. Toast each tortilla on both sides for about 30 seconds until golden. Remove and set aside.
Cook the Chicken:
- In the same skillet, add olive oil. Once hot, add the marinated chicken pieces. Cook until the chicken is fully cooked, reaching an internal temperature of 165°F (approximately 6-8 minutes).
Make the Pico de Gallo:
- In a bowl, combine tomatoes, jalapeños, red onion, cilantro, lime juice, salt, and black pepper. Mix well and set aside.
Prepare the Cilantro Lime Sauce:
- Mix mayonnaise, sour cream, cilantro, lime juice, and salt in a bowl until smooth.
Assemble the Tacos:
- Place about 1/4 cup of cooked chicken into each toasted tortilla. Top with pico de gallo and a drizzle of cilantro lime sauce. Serve immediately and enjoy.
