Dumpling Soup

Ingredients

🥟 1 48oz bag of beef, vegetable, or chicken dumplings from Costco
🥬 2 cups chopped bok choy
🍄 8oz sliced mushrooms
🥕 1 cup shredded carrots
🧄 1 tablespoon garlic paste
🫚 1 tablespoon ginger paste
🥄 1 tablespoon oil
🌿 1 teaspoon sesame oil
🥄 1 1/2 tablespoons 'Better Than Bouillon' (or 1 tablespoon chicken bouillon powder)
🥣 2 32oz cartons of chicken broth
Toppings:
🥢 Chili garlic sauce
🌿 Scallions


Instructions

1- Prepare the Base:

  • In a large pot, heat the oil over medium heat. Add the garlic paste and ginger paste, sauté for about 1 minute until fragrant.

2- Cook the Vegetables:

  • Add the sliced mushrooms, shredded carrots, and chopped bok choy to the pot. Sauté the vegetables for 3-4 minutes until they start to soften.

3- Broth Time:

  • Pour in the chicken broth and bring to a gentle simmer. Stir in the 'Better Than Bouillon' or chicken bouillon powder until fully dissolved. Add sesame oil for an extra depth of flavor.

4- Add the Dumplings:

  • Carefully add the frozen dumplings to the simmering broth. Allow them to cook for about 6-8 minutes, or until thoroughly heated and cooked through, stirring gently to prevent sticking.

5- Season and Serve:
