Ingredients
🥩 1 pound ground beef
🧅 1 small onion, finely chopped
🧄 2 cloves garlic, minced
🍅 1 medium tomato, diced
🌶️ 3.5 oz (half a 7 oz can) chipotle peppers in adobo sauce
🌮 3 tablespoons taco seasoning
💧 1/2 cup water
🌯 6 burrito-size flour tortillas
🥙 6 tostadas
🧀 2 cups shredded cheese (cheddar or a Mexican blend)
🧀 Salsa con Queso, as needed
🥄 Sour cream, as needed
🍅 Diced tomatoes, for topping
🥬 Shredded lettuce, for topping
🫙 Cooking spray
Instructions
1- Prepare the Beef Mixture:
- In a large skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes, breaking it into small pieces as it cooks.
- Add the chopped onion, minced garlic, and diced tomato to the skillet. Sauté for another 2-3 minutes until the onion is translucent and the mixture is fragrant.
2- Add Flavor:
- Stir in the chipotle peppers in adobo sauce, taco seasoning, and water. Mix well, then cover and simmer on medium heat for about 5 minutes, allowing the flavors to meld together.
3- Assemble the Crunchwraps:
- Lay a flour tortilla on a flat surface. Spread 2 tablespoons of Salsa con Queso onto the center.
- Spoon a portion of the beef mixture onto the queso, then place a tostada on top.
- Spread a generous amount of sour cream over the tostada, followed by a layer of diced tomatoes, lettuce, and a sprinkle of shredded cheese.
- Fold the edges of the tortilla toward the center, creating pleats as you go, to completely encase the filling.
4- Cook:
- Heat a nonstick skillet over medium heat and coat with cooking spray.
- Carefully place each Crunchwrap seam-side down into the skillet. Cook for about 3-4 minutes on each side, or until the tortilla is golden brown and crispy.
5- Serve:
- Slice each Crunchwrap in half and serve immediately, with extra salsa, guacamole, or your favorite toppings.
