Creamy Herb Potato Salad

Ingredients

๐ฅ 2 heaping tablespoons plain Greek yogurt or sour cream
๐ก 2 tablespoons Dijon mustard
๐ฅ 2 tablespoons sweet relish
๐ Juice of half a lemon
๐ง 1 teaspoon salt (or to taste)
โซ 1 teaspoon black pepper (or to taste)
Instructions
1- Prepare the Potatoes:
- Start by placing the baby potatoes in a large pot and cover them with water.
- Bring to a boil over medium-high heat.
- Cook until the potatoes are fork-tender, about 25 minutes. Once done, drain and rinse them under cold water to stop the cooking process.
- Cut the cooled potatoes in half.
2- Chop the Vegetables and Herbs:
- While the potatoes are cooking, finely chop the red onion and celery.
- For the herbs, chop the dill and parsley finely.
- These will add a fresh burst of flavor to your salad.
3- Make the Creamy Dressing:
- In a mixing bowl, combine the mayonnaise, Greek yogurt (or sour cream), Dijon mustard, and sweet relish.
- Add the lemon juice, and season with salt and black pepper.
- Mix well until all ingredients are fully incorporated to create a creamy dressing.
4- Assemble the Salad:
- In a large bowl, add the halved potatoes, chopped red onion, celery, dill, and parsley.
- Pour the creamy dressing over the top and gently toss everything together until the potatoes and veggies are well-coated with the sauce.
