Ingredients
For the Pumpkin Bread:
🎃 1 (15oz) can of pumpkin purée
🥚 3 eggs
🍃 2 teaspoons vanilla extract
🛢️ 1/2 cup of oil
🍚 1 cup white sugar
🍯 1/2 cup brown sugar
🥄 1/2 teaspoon baking soda
🥄 1 teaspoon baking powder
🧂 1/8 teaspoon salt
🍂 1 teaspoon pumpkin spice
🌿 1 teaspoon cinnamon
🌾 2 cups flour
🥑 Avocado spray for the pan
🌰 Pumpkin seeds for the top
For the Cream Cheese Filling:
🧀 8oz cream cheese at room temperature
🍚 1/3 cup of sugar
🍃 1 teaspoon vanilla extract
Instructions
1- Preheat Oven and Prepare Batter:
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the pumpkin purée, eggs, and oil. Whisk until well blended.
2- Mix Sugars and Spices:
- Add the white and brown sugars, vanilla extract, salt, cinnamon, pumpkin spice, baking soda, and baking powder to the mix.
- Stir until all ingredients are well incorporated.
3- Incorporate Flour:
- Gradually add the flour to the wet mixture.
- Stir until just combined. Set aside while you prepare the cream cheese filling.
4- Prepare Cream Cheese Filling:
- Combine the cream cheese, sugar, and vanilla extract in a separate bowl.
- Mix until smooth and creamy.
5- Assemble in Loaf Pan:
- Prepare a loaf pan with avocado spray to prevent sticking.
- Pour half of the pumpkin batter into the pan, spreading it evenly.
6- Add Cream Cheese Layer:
- Dollop half of the cream cheese filling over the batter.
- Use a spatula to spread it evenly.
7- Add Remaining Layers:
- Pour the remaining pumpkin batter over the cream cheese layer, smoothing it out.
- Add the final layer of the cream cheese filling on top and spread it evenly.
8- Top and Bake:
- Sprinkle pumpkin seeds over the top for an extra crunch.
- Bake in the oven for 60 to 65 minutes, or until a toothpick inserted into the center comes out clean.
9- Cool and Serve:
- Allow the bread to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
