Chocolate Covered Dates and Apricots

Ingredients
๐ฐ 10 soft Medjool dates
๐ 10 dried apricots
๐ฅ 1/2 cup shelled pistachios, divided (reserve some for topping)
๐ฐ 1/4 cup pecans
๐ฐ 1/4 cup almonds
๐ซ 1 cup chocolate melting wafers (such as Ghirardelli)
Instructions
1- Prepare the Nuts:
- Finely chop the shelled pistachios, pecans, and almonds.
- Set aside a small portion of the crushed pistachios for topping.
2- Fill the Dates and Apricots:
- Slice open each date and apricot without cutting all the way through. Remove the pits from the dates.
- Stuff each cavity generously with the nut mixture, pressing gently to compact.
3- Melt the Chocolate:
- In a microwave or using a double boiler, slowly melt the chocolate wafers until smooth and glossy.
4- Dip the Fruits:
- Using a fork or skewer, dip each filled date and apricot into the melted chocolate, ensuring they are evenly coated.
- Allow any excess to drip off.
5- Add the Toppings:
- Place the chocolate-covered treats on a parchment-lined baking sheet.
- Quickly sprinkle the reserved crushed pistachios on top before the chocolate sets.
6- Set the Chocolate:
- Allow the chocolate to solidify at room temperature or speed up the process by placing the treats in the refrigerator for about 15-20 minutes.
7- Serve:
- Once the chocolate is firm, arrange the dates and apricots on a serving platter and enjoy!
