Chipotle Chicken Pasta
Indulge in a creamy, smoky delight full of vibrant flavors and textures with this Chipotle Chicken Pasta. A family favorite, this dish is perfect for a cozy dinner at home and can be easily customized by adding your favorite veggies like asparagus, peas, or spinach.
Ingredients
🍗 3 chicken breasts (cut into bite-sized pieces)
🌶️ 1 teaspoon paprika
🌶️ 1/2 teaspoon black pepper
🧄 1/2 teaspoon garlic powder
🧂 1/2 teaspoon salt
🌿 1/2 teaspoon cumin
🫒 3 tablespoons olive oil
🧄 4 cloves garlic (minced)
🧅 1 medium-sized onion (diced)
🌶️ 1 red bell pepper (diced)
🌶️ 1 orange bell pepper (diced)
🌶️ 1/2 cup chipotle peppers in adobo sauce (diced)
🥛 1 cup heavy cream
🍗 1 cup chicken broth
🧀 1 cup shredded parmesan cheese
🍝 1 pound pasta
💧 1 cup pasta water (reserved before draining the pasta)
🌿 Fresh basil for garnish
🧀 Extra Parmesan cheese for garnish
Instructions
1- Prep the Pasta:
- Boil the pasta in salted water until al dente.
- Reserve one cup of the pasta water before straining the pasta.
- Set both aside.
2- Season the Chicken:
- In a large bowl, combine the bite-sized chicken pieces with paprika, black pepper, garlic powder, salt, and cumin.
- Mix well to ensure the chicken is evenly coated with the spices.
3- Cook the Chicken:
- In a large skillet, heat the olive oil over high heat.
- Add the seasoned chicken and cook for about 10 minutes until golden brown and cooked through.
4- Sauté the Veggies:
- To the cooked chicken, add minced garlic, diced onion, and diced bell peppers.
- Sauté for around 5 minutes until the onions are translucent and the peppers are softened.
5- Create the Sauce:
- Stir in the diced chipotle peppers in adobo sauce, heavy cream, chicken broth, and shredded parmesan cheese.
- Mix until everything is well combined and the cheese has melted into a creamy sauce.
6- Combine Pasta and Sauce:
- Add the cooked pasta and the reserved pasta water to the skillet.
- Toss everything together until the pasta is well-coated in the sauce and continue to cook for another 2 minutes.
7- Serve and Garnish:
- When done, dish out the pasta onto plates and garnish with fresh basil and extra parmesan cheese.
- Serve immediately and enjoy this comforting dish!
