Chicken Parmesan 2
Prepare to indulge in a variation of an Italian favorite with a crispy twist! This Chicken Parmesan features a crunch from panko breadcrumbs, melded with the rich flavors of a homemade tomato sauce and gooey mozzarella cheese. Serve it with spaghetti, garlic cheese toast, and a fresh salad for a complete and satisfying meal that's perfect for any occasion.
Ingredients
For the Chicken:
๐ 2 chicken breasts, cut into thin cutlets
๐ง 1 teaspoon garlic powder
๐ถ๏ธ 1 teaspoon paprika
๐ถ๏ธ 1 teaspoon cayenne pepper
๐ถ๏ธ 1 teaspoon black pepper
๐ง 1 teaspoon salt
๐ฅ 2 eggs
๐ง 2 tablespoons water
๐ฅฃ 1 cup all-purpose flour
๐ 1 cup panko breadcrumbs
๐ข๏ธ Canola oil for frying
For the Sauce:
๐ 2 tomatoes, chopped
๐ง 1 small onion, chopped
๐ง 3 cloves of garlic, minced
๐ 1 jar of marinara sauce
๐ฟ 1 teaspoon oregano
๐ฟ 1 teaspoon thyme
๐ฟ 1 teaspoon savory
๐ฆ 1 cup water
For Serving:
๐ง 1 cup mozzarella cheese slices
๐ Spaghetti, cooked as per package instructions
๐ฅ Garlic cheese toast
Instructions
1- Prepare the Chicken:
- Place chicken breasts on a cutting board. Use a sharp knife to slice them into thin cutlets. This helps them cook quickly and evenly.
2- Prepare the Coating:
In a bowl, whisk together the eggs and water.
In another bowl, combine the panko breadcrumbs with garlic powder, cayenne pepper, paprika, black pepper, and salt.
In a third bowl, add the flour and mix in the same spices: garlic powder, cayenne pepper, paprika, black pepper, and salt.
3- Coat the Chicken:
Heat a skillet over medium-high heat and add canola oil.
Dip each chicken cutlet first in flour, then egg wash, and finally coat with breadcrumb mixture. Press the breadcrumbs onto the chicken to ensure an even coating.
4- Fry the Chicken:
Place the chicken cutlets in the hot skillet. Do not overcrowd the pan; cook 3 at a time if necessary.
Fry each side for about 4-5 minutes or until golden brown and crispy. Remove and set aside.
5- Make the Sauce:
In the same skillet, add a little more oil, chopped tomatoes, onion, and minced garlic.
Sautรฉ for a few minutes until fragrant and the onions are translucent.
Add the marinara sauce, oregano, thyme, savory, and water. Stir to combine.
6- Simmer the Chicken:
Lower heat to a simmer. Return the chicken cutlets to the skillet and cover with sauce.
Cover the skillet and let it simmer for about 10-15 minutes. This allows the chicken to absorb the flavors of the sauce.
7- Add the Cheese:
Place the mozzarella cheese slices over each chicken cutlet.
Cover and let the cheese melt, then turn off the heat.
8- Prepare the Spaghetti:
- Cook spaghetti according to package instructions. Drain and set aside.
9- Serve:
- Serve the chicken Parmesan with cooked spaghetti, garlic cheese toast, and a side salad.
