Ingredients

For the Chicken Kofta Patties:
๐Ÿ” 2 pounds ground chicken
๐ŸŒถ๏ธ 1 red bell pepper
๐Ÿง… 1 medium-sized onion
๐Ÿง„ 4 cloves garlic
๐ŸŒฟ A handful of cilantro
๐ŸŒฑ A handful of parsley
๐ŸŒฟ 1 teaspoon coriander
๐Ÿง‚ 1 teaspoon black pepper
๐ŸŒถ๏ธ 1 teaspoon paprika
๐ŸŸก 1 teaspoon turmeric
๐ŸŒถ๏ธ 1/2 teaspoon cayenne pepper
๐Ÿง‚ 1/2 tablespoon salt
๐Ÿ›ข๏ธ 1 cup oil (for pan frying)

For the Cucumber Sauce:
๐Ÿถ 1 cup sour cream
๐Ÿง„ 1 clove garlic
๐Ÿฅ’ 2 Persian cucumbers
๐ŸŒฟ 1 teaspoon dried mint
๐Ÿ‹ Juice of half a lemon
๐Ÿง‚ 1/2 teaspoon salt (or to taste)


Instructions

1- Prepare the Vegetable Mixture:

  • In a food processor, add the red bell pepper, onion, garlic cloves, cilantro, and parsley. Pulse until finely chopped.
  • Strain the mixture to remove excess liquid and set aside.

2- Make the Kofta Mixture:

  • In a large bowl, combine the ground chicken with the strained vegetable mixture.
  • Season with coriander, black pepper, paprika, turmeric, cayenne pepper, and salt.
  • Mix everything thoroughly until well combined.

3- Form and Cook the Patties:

  • Heat the oil in a non-stick skillet over medium heat.
  • Shape the chicken mixture into patties of desired size.
  • Fry the patties for 3 to 4 minutes on each side, or until fully cooked through and no pink remains inside.

4- Prepare the Cucumber Sauce:

  • In a blender, combine sour cream, garlic, Persian cucumbers, dried mint, lemon juice, and salt.
  • Blend until smooth and well combined.

5- Serve:

  • Plate the cooked chicken kofta patties with yellow rice, red onions, tomatoes.
  • Drizzle with the prepared cucumber sauce and garnish with fresh parsley.
