Bruschetta with Mozzarella and Balsamic Glaze

Ingredients

๐Ÿฅ– 1 loaf of baguette or Country French bread
๐Ÿซ’ 2 tablespoons olive oil for the bread
๐Ÿ… 1 large tomato
๐ŸŒฟ A handful of fresh basil
๐Ÿง„ 1 clove of garlic
๐Ÿ‹ Juice of 1 lemon
๐Ÿง‚ 1/2 teaspoon salt
๐Ÿง€ 8 oz Pearl mozzarella
๐Ÿซ’ 1/4 cup extra virgin olive oil
๐Ÿ‡ Balsamic glaze (for drizzling on top)


Instructions

1- Prepare the Bread:

  • Preheat your oven to 375ยฐF (190ยฐC).
  • Cut the loaf of bread into thin slices.
  • Brush both sides of each slice with olive oil.
  • Arrange the slices on a baking sheet and place them in the oven.
  • Toast until crispy and golden brown, about 10 minutes.

2- Prepare the Topping:

  • Dice the tomato into small pieces, chop the basil finely, and mince the garlic.
  • In a medium bowl, combine the tomato, basil, and garlic.
  • Squeeze the juice of one lemon over the mixture, add the salt, and gently fold in the Pearl mozzarella.
  • Pour in the extra virgin olive oil and mix all ingredients well to combine.

3- Assemble the Bruschetta:

  • Once the bread is toasted, remove it from the oven.
  • Top each slice with a generous amount of the tomato-mozzarella mixture.
  • Just before serving, drizzle balsamic glaze over each bruschetta for that perfect finishing touch.

4- Serve and Enjoy:

  • Arrange on a serving platter and enjoy immediately, experiencing the blend of flavors and textures.
