Broccoli Cheddar Soup
Warm up on a chilly day with this creamy, flavorful Broccoli Cheddar Soup. Bursting with cheesy goodness and packed with nutritious broccoli, this comforting recipe is easy to make and perfect for a cozy night in.
Ingredients
🧈 1 stick of unsalted butter
🧅 1 medium-sized onion, chopped
🧄 3 cloves of garlic, minced
🥕 2 cups shredded carrots
🌾 1/3 cup flour
🍲 32 ounces of chicken broth (or vegetable broth)
🥛 2 cups of half and half
🧂 1 teaspoon salt
🌶️ 1 teaspoon paprika
🌶️ 1/2 teaspoon black pepper
🌶️ 1/2 teaspoon chili flakes
🥦 1 whole head of broccoli, chopped
🧀 8 ounces of shredded cheddar cheese
Instructions
1- Sauté the Aromatics:
- Place a pan over high heat and add the butter. Once it melts, add the chopped onion and minced garlic.
- Sauté for a few minutes until the onion is translucent.
2- Add the Carrots and Flour:
- Stir in the shredded carrots and mix well.
- Let them cook together for about a minute before sprinkling in the flour. Stir continuously to combine, allowing the flour to coat the vegetables evenly.
3- Incorporate the Liquids:
- Gradually add the chicken (or vegetable) broth to the pan, followed by the half and half.
- Stir well to combine and ensure a smooth consistency.
4- Season and Simmer:
- Season the mixture with salt, paprika, black pepper, and chili flakes, and add the chopped broccoli.
- Mix thoroughly, bring to a boil, and then let it simmer for about 10 minutes until the broccoli is tender.
5- Add the Cheddar Cheese:
- Turn off the heat and add the shredded cheddar cheese.
- Stir until the cheese has completely melted and the soup is creamy.
6- Serve and Enjoy:
- Ladle the soup into bowls and serve warm.
