Ingredients
For the Beef Samosas:
🧅 1 medium-sized onion, chopped
🥩 2 to 3 pounds of ground beef
🫛 1 12oz bag of frozen peas and carrots
🧄 1 tablespoon of garlic paste
🧄 1 tablespoon of ginger paste
🌿 1 1/2 tablespoons of garam masala
🧂 1 1/2 teaspoons of salt
🌶️ 1 teaspoon of cayenne pepper
✨ 1 teaspoon of turmeric
🌿 1 teaspoon of cumin
🌿 1 teaspoon of coriander
🥟 2 packets of empanada discs
🫒 2 tablespoons of oil
For the Cilantro-Mint Chutney:
🌿 1 to 2 cups of cilantro
🌿 1 cup of mint leaves
🧄 1 clove of garlic
🌶️ 1 jalapeño, seeds removed
🧀 1 to 2 tablespoons of cream cheese
🍋 Juice of half a lemon
💧 1/4 cup of water
🧂 1/4 teaspoon of salt
🌿 1/8 teaspoon of cumin
Instructions
1- Prepare the Beef Filling:
- Heat oil in a large pan over medium heat. Add the chopped onions and sauté for 4 to 5 minutes until they soften and turn slightly golden.
- Add the ground beef to the pan. Cook until browned, breaking apart the meat as it cooks.
- Stir in the garlic paste and ginger paste. Cook for another 2 minutes.
- Add garam masala, salt, cayenne pepper, turmeric, cumin, and coriander. Mix well and cook for 5 minutes, allowing the spices to infuse the meat.
- Add the frozen peas and carrots. Cook for 5 more minutes until the vegetables are heated through. Remove from heat and let the mixture cool completely.
2- Make the Samosas:
- Once the beef mixture has cooled, take an empanada disc and place it flat. Add a desired amount of filling in the center, careful not to overstuff.
- Fold the disc over and press the edges firmly to seal, creating a semicircle. Ensure it's completely closed to avoid leaking during frying.
- Continue with the remaining discs and filling.
3- Fry the Samosas:
- Heat oil in a deep frying pan over medium-high heat. Fry the samosas until golden brown and crisp on both sides, then transfer to a paper-towel-lined plate to drain excess oil.
4- Prepare the Chutney:
- In a blender or food processor, combine cilantro, mint, garlic, jalapeño, cream cheese, lemon juice, water, salt, and cumin. Blend until smooth. Adjust seasoning to taste.
