Av Nook (Beef and Chickpea Stew)

Ingredients
🥩 2 pounds chuck tender steak (or your favorite cut of beef, lamb, or veal)
🥫 2 cans of chickpeas
🧅 2 medium-sized onions, sliced
🧄 2 cloves of garlic, minced
🫒 3 tablespoons olive oil
🧂 1/2 teaspoon salt (or to taste)
🐔 1 tablespoon chicken bouillon
🌶️ 1/2 teaspoon black pepper
🌿 1 teaspoon turmeric
🍛 1 teaspoon curry powder
🌶️ 1/2 teaspoon chili flakes
💧 4 cups water
Instructions
1- Prepare the Ingredients:
- Begin by slicing the onions and mincing the garlic.
- Cut the beef into bite-sized pieces and pat them dry with a paper towel.
2- Sauté Aromatics:
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the sliced onions and sauté until they become soft and translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
3- Brown the Beef:
- Increase the heat to medium-high and add the beef to the pot.
- Cook until the beef is browned on all sides, stirring occasionally.
4- Season the Stew:
- Add the chicken bouillon, salt, black pepper, turmeric, curry powder, and chili flakes to the pot.
- Stir to coat the beef evenly with the spices.
5- Add Chickpeas and Water:
- Drain and rinse the canned chickpeas, then add them to the pot.
- Pour in the 4 cups of water and stir well to combine.
6- Simmer the Stew:
- Bring the mixture to a gentle simmer, then reduce the heat to medium.
- Cover the pot and let it simmer for 25 to 40 minutes, or until the beef is tender and the flavors are well combined.
7- Serve:
- Serve the stew hot, accompanied with soft, fluffy white rice.
