Atayef
Atayef is an irresistible Middle Eastern dessert, perfect for Ramadan or any festive occasion. These delightful stuffed pancakes are filled with crunchy walnuts or pistachios, then fried to a golden crisp. For a lighter twist, you can bake or air-fry them. A final dip in sweet syrup elevates their flavor, creating a dessert that’s truly unforgettable.
Ingredients
🥛 1 cup warm milk
💧 2 cups warm water
🍚 2 cups flour
🌾 1/2 cup semolina
🍬 1 tablespoon sugar
🔮 1 teaspoon baking powder
⭐ 1/2 teaspoon yeast
🌰 1 cup crushed walnuts
🌰 1 cup crushed pistachios
🥄 1 tablespoon sugar (for walnut filling)
🌿 1 teaspoon cinnamon
🛢 2 cups oil for frying
Instructions
1- Prepare the Batter:
- In a blender, combine the warm milk, warm water, flour, semolina, sugar, baking powder, and yeast.
- Blend until everything is thoroughly mixed, forming a smooth batter.
- Cover the mixture with plastic wrap and allow it to rest for 20 minutes.
2- Prepare the Fillings:
- For the walnut filling, mix the crushed walnuts with 1 tablespoon of sugar and cinnamon in a bowl.
- The pistachio filling only requires crushed pistachios.
3- Cook the Atayef:
- Heat a non-stick pan over medium heat.
- Pour a small amount of batter onto the pan to form a pancake of about 4 inches in diameter.
- Cook until the bottom is golden and the top appears dry.
- Remove and cover with a clean kitchen towel to keep them soft.
4- Fill the Atayef:
- Once all pancakes are cooked, place a tablespoon of your chosen filling in the center of each atayef.
- Fold each pancake in half and seal the edges firmly by pinching them together to enclose the filling.
5- Fry the Atayef:
- Heat the oil in a deep pan.
- Fry the filled atayef until they turn golden brown and crispy.
- Remove from oil and let them drain on a paper towel.
6- Serve:
- Dip each fried atayef in simple syrup before serving.
