Amba Sauce

Amba sauce is a versatile, tangy, and slightly spicy condiment that hails from Middle Eastern cuisine. Its blend of flavors makes it a perfect accompaniment for a variety of dishes, from sandwiches and falafel to egg rolls and samosas. Its delightful mix of sweet mango and aromatic spices will elevate any meal.

Ingredients

🥭 1 large mango, peeled and chopped
🧄 2 cloves of garlic
🫒 1 tablespoon olive oil
🌕 1/2 teaspoon turmeric
🌶 1/2 teaspoon cayenne pepper
🍛 1 teaspoon curry powder
🌿 1 tablespoon fenugreek powder
🧂 1/2 tablespoon salt (or to taste)
💧 1 cup water
🍏 1 cup apple cider vinegar


Instructions

1- Prepare the Mango:

  • Begin by peeling and chopping a large mango into small pieces.
  • If you have smaller mangoes, use a couple to achieve the same amount.

2- Combine Ingredients:

  • In a medium-sized pot, add the chopped mango pieces.
  • Add in the garlic cloves, olive oil, turmeric, cayenne pepper, curry powder, fenugreek powder, salt, water, and apple cider vinegar.

3- Cook the Mixture:

  • Bring the mixture to a boil over medium heat.
  • Allow it to cook for 8 to 10 minutes, or until the mango pieces are softened.

4- Process and Cool:

  • Once softened, remove the pot from the heat.
  • You can choose to leave the mixture chunky or purée it into a smooth sauce using an immersion blender or food processor for a uniform texture.

5- Store and Enjoy:

  • Let the sauce cool down to room temperature.
  • Pour the cooled amba sauce into a Mason jar or an airtight container.
  • Store the jar in the refrigerator for up to two weeks.
  • Enjoy this flavorful sauce with your favorite meals!
